My Vegan Chia Seed Pudding Recipe

If you have been following along for awhile, you know I have been on a health and gut-health journey. I was always looking for easy, delicious and high protein foods. This recipe is something I eat every day. I think it's amazing as a breakfast, lunch, dinner, snack or even dessert!
INGREDIENTS:
- 1 Can of Organic Full Fat Coconut Milk
- 1/2 Cup of Water
- 5-6 TBSP Chia Seeds
- 1-2 TBSP Hemp Seeds
- As much Cinnamon as you like (I like a-lot)
- 1 TBSP Date Syrup
- Pinch of Salt
- 1 TSP Vanilla Extract
TOPPINGS:
- Handful Fresh Organic Berries (I like raspberry and blackberry)
- 2 TBSP Vanilla Almond Butter
- Sprinkle of Bee Pollen
- Organic Granola
HOW TO MAKE:
- Add all ingredients into a container with sealable lid
- Make sure it is mixed and combined well
- Leave in the fridge 1 hour to overnight
- Add toppings
- ENJOY
Glow tip: Make a few of them at a time so you are ready for the week! This is a great food to have on hand to eat between clients.
